Spencer Taliaferro

Starting as a busboy in the hospitality industry, Taliaferro quickly learned the ropes, and landed his first bartending gig at the age of 18. In 2012, his adventurous nature led him to Miami, honing his skills at various influential dining outposts such as Crave, Azúcar Restaurant and Green Street Café in the bustling neighborhood of Coconut Grove.

In 2014, Taliaferro joined Area 31 where he quickly outgrew his job as bartender; in less than a year, he was promoted to head bartender at the property's sultry cocktail lounge. A true perfectionist, when he wasn’t mixing drinks behind the bar, he was experimenting with ingredients, flavors and techniques, constantly raising the bar and wowing his audience. In 2016, Taliaferro was appointed Head Bartender of Kimpton EPIC Hotel, managing the beverage program for LILT Lounge, Area 31 and the hotel. He has represented his brand and Miami in various nationally and internationally renowned bartending events including Miami's leg of Taste of Cayman International Mixology Competition and World's Best Bartender 2017 for Diplomático Rum, among others.

With over ten years of experience, Taliaferro is considered one of the most influential, rising mixologists in South Florida. He stands alone in creativity and enthusiasm. His trademark? Ice. His unique "In Ice We Trust" ice program features exotic flavor and liquor infusions has dubbed Taliaferro as "the scientist behind the bar." In addition, he prides himself in creating avant-garde cocktails with innovative presentations, such as his signature Lost in 1825 – a piña colada-infused ice block topped with frozen old fashioned bitters. Taliaferro's cocktails go beyond a perfectly mixed drink; they take you on an unpredictable journey of the senses.
